Grandma’s Cream of Tomato Soup

Directions:
1. In a large pot, melt the butter over medium heat. Add the chopped onion and garlic. Cook until soft, about 5 minutes.
2. Pour in the whole peeled tomatoes with their juice. Break up the tomatoes with a spoon.
3. Add the chicken (or vegetable) broth, sugar, salt, and pepper. Stir well.
4. Let it simmer uncovered for 15-20 minutes, stirring occasionally.
5. Remove from heat. Carefully use an immersion blender (or regular blender) to puree the soup until smooth.
6. Return to the pot and stir in the heavy cream. Heat gently but don’t let it boil.
7. Serve warm with a sprinkle of fresh basil or parsley on top. Pair it with a grilled cheese for the ultimate comfort meal!
Tip: For a little kick, add a pinch of red pepper flakes while cooking.
