  • onion, diced

  • carrots, diced

  • celery stalks, diced

  • 3 cloves garlic, minced

  • bay leaf

  • 1 tsp dried thyme or 2 tsp fresh

  • ½ tsp black pepper

  • 6–8 cups chicken broth or water (or a mix)

  • Salt, to taste (add at the end)

  • Optional: 1 tbsp apple cider vinegar for brightness

  • Optional: chopped parsley for garnish
