Low Carb Garlic Parmesan Diced Zucchini
Directions
Preheat your oven to 400°F (200°C).
In a large bowl, toss the diced zucchini with olive oil, minced garlic, salt, and pepper until well coated.
Spread the zucchini evenly on a baking sheet lined with parchment paper.
Sprinkle the grated Parmesan cheese over the zucchini.
Bake in the preheated oven for 15-20 minutes, or until the zucchini is tender and the cheese is golden brown.
Remove from the oven and garnish with fresh parsley, if using.
Serve warm and enjoy!
