Mediterranean Chicken and Vegetable Soup

Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini, diced
  • 1 bell pepper (any color), diced
  • 1 cup green beans (fresh or frozen), cut into bite-sized pieces
  • 1 can (14.5 oz) diced tomatoes, with juices
  • 4 cups chicken broth (low-sodium)
  • 2 cups cooked, shredded chicken (rotisserie chicken works great)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon cumin (optional, but adds a nice depth)
  • Salt and pepper to taste
  • 1 tablespoon fresh lemon juice (optional, for brightness)
  • 1/4 cup chopped fresh parsley (for garnish)
  • Crumbled feta cheese (optional, for topping)
