What a delight! This is my hubby’s favorite side dish! But he eats it like a main!

Ingredients
– 4 large russet potatoes, peeled and thinly sliced
– 3 tablespoons unsalted butter
– 3 tablespoons all-purpose flour
– 2 cups whole milk
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/2 teaspoon paprika
– 2 cups shredded sharp cheddar cheese
– 1/2 cup grated Parmesan cheese
– 1/4 teaspoon garlic powder
– 2 tablespoons fresh chives, finely chopped (optional, for garnish)
