In a bowl, combine the chicken with paprika, cumin, garlic powder, onion powder, salt, and pepper. Mix well.

Heat a skillet over medium heat and brush lightly with olive oil.

Place one tortilla in the skillet. Sprinkle cheese over half of the tortilla.

Add a layer of seasoned chicken (and vegetables if using) on top of the cheese.

Sprinkle a little more cheese, then fold the tortilla in half.

Cook for 2–3 minutes per side, until golden brown and the cheese is fully melted.

Remove from the pan and repeat with remaining tortillas.

Slice into wedges and serve warm.
