Chicken Quesadillas

  • In a bowl, combine the chicken with paprika, cumin, garlic powder, onion powder, salt, and pepper. Mix well.
  • Heat a skillet over medium heat and brush lightly with olive oil.
  • Place one tortilla in the skillet. Sprinkle cheese over half of the tortilla.
  • Add a layer of seasoned chicken (and vegetables if using) on top of the cheese.
  • Sprinkle a little more cheese, then fold the tortilla in half.
  • Cook for 2–3 minutes per side, until golden brown and the cheese is fully melted.
  • Remove from the pan and repeat with remaining tortillas.
  • Slice into wedges and serve warm.
