Ingredients:

  • 1 tbsp vegetable oil
  • 2 garlic cloves, minced
  • 1-inch ginger, minced
  • 1 small onion, thinly sliced
  • 1 cup mushrooms, sliced (button, shiitake, or your choice)
  • 1 cup firm tofu, cubed
  • 1/2 cup carrots, julienned
  • 1/2 cup bean sprouts
  • 3 spring onions, chopped
  • 6 cups vegetable broth
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar (optional)
  • 1 tbsp sesame oil (optional)
  • Salt and pepper to taste
  • Cooked rice noodles or orzo (optional, for added texture)
