Mushroom and Tofu Vegetable Soup
Ingredients:
- 1 tbsp vegetable oil
- 2 garlic cloves, minced
- 1-inch ginger, minced
- 1 small onion, thinly sliced
- 1 cup mushrooms, sliced (button, shiitake, or your choice)
- 1 cup firm tofu, cubed
- 1/2 cup carrots, julienned
- 1/2 cup bean sprouts
- 3 spring onions, chopped
- 6 cups vegetable broth
- 3 tbsp soy sauce
- 1 tbsp rice vinegar (optional)
- 1 tbsp sesame oil (optional)
- Salt and pepper to taste
- Cooked rice noodles or orzo (optional, for added texture)
