Slow-Cooked Bean and Sausage Stew

Ingredients:

  • 2 cups mixed dried beans (or 3 cans of mixed beans, drained and rinsed)
  • 1 lb (450 g) smoked sausage or kielbasa, sliced
  • 1 can (14 oz) diced tomatoes
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 tbsp tomato paste
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • 1 bay leaf
  • 1 tbsp olive oil (optional, for sautéing)
  • Salt and pepper to taste
  • Optional: Bacon pieces for added flavor
